Today was a comfort food day. I’m home with a cold and it is pouring buckets of rain outside.

Oatmeal-Rhubarb Bars

1 cup All-purpose flour
3/4 cup Oatmeal — uncooked
1 cup Brown sugar — packed
1/2 cup Butter, unsalted
1/2 cup Sugar
1 TBS Cornstarch
1 cup Water
1 tsp Vanilla extract
2 cups Rhubarb cut in 1/2 inch pieces
Mix flour, oatmeal, brown sugar and butter until crumbly. Press 1/2 into greased 9″ pan. Combine sugar, cornstarch, water, rhubarb and vanilla; cook till thick and clear. Top with other half crumb mixture. Bake at 350F for 40 minutes.
